Chicken Alfredo Pizza..fast...easy...Yum!

Today I am posting a fun family recipe that is so dang easy to make. The best part, the kids love it, my hubby loves it, and I love it because it is so fun and easy to make. Win win! Perfect for a summer night.

Chicken Alfredo Pizza
Pizza crust (either your favorite recipe from scratch or refrigerated dough)
4 boneless chicken breasts cooked and diced
3 heads of broccoli chopped and cooked
1 bottle Alfredo sauce
2 cloves of garlic
Mozzarella cheese
Preheat your oven to 450 degrees. Roll out your dough and cook for five to ten minutes. The crust doesn't have to be totally cooked, but just started. While the dough is cooking, cut up your pieces of chicken into cubes and cook them in a pan adding the garlic, and salt and pepper to taste. Cut up you broccoli and place it in a sauce pan.  Cover with water cooking until tender. Take the pizza crust out of the oven and spread the alfredo sauce on top. Sprinkle the chicken, broccoli, and top with mozzarella cheese. Put them in the oven and bake for another five to ten minutes until golden brown on top. So good...so easy.

Zucchini Bruchetta

It has been so hot around here lately and that means that the gardens are growing and producing all kinds of vegetables. I am sharing my now favorite way to prepare zucchini.  I was visiting Rome a while back and was served several different types of bruchetta. When I tasted the one topped with zucchini, I about died. So dang delicious! I had to re-create that recipe at home for sure.  This is what I came up with.

Zucchini Bruchetta
Two medium zucchini diced
Two or three cloves of garlic (your own personal taste)
1 Tablespoon of fresh thyme leaves
salt to taste
Olive oil to coat
1 to 2 teaspoons balsamic vinegar (to taste)

Combine the diced zucchini, garlic,salt, and chopped thyme in a bowl. Coat with desired amount of olive oil.  Spread ingredients onto a cookie sheet and roast in  a 450 degree oven for five to ten minutes or until zucchini is tender.  Take out of the oven and let the mixture come to room temperature. Pour the zucchini into a bowl and drizzle the balsamic vinegar over it. Serve at room temperature on slightly toasted sliced baguettes.

This recipe is so delicious, and such an easy way to use up that garden zucchini.

Dreamy ice cream dessert

It has been hot here, and when it is hot we love ice cream.  One of my favorite ice cream desserts is this yummy recipe I am about to share. I had it at a party at my friend's home years ago and it quickly became one of my very favorites.  It is a hit no matter where you take it, or who eats it.
It all starts with a half gallon of vanilla ice cream. This needs to be softened, so leave it on the counter while you mix the rest.  You will need rice crispies, coconut, butter, brown sugar, and walnuts.
Mix together 2 cups of the rice cereal, 1 cup of brown sugar, 1 cup coconut, and 1 cup chopped nuts. Pour in 1 stick of melted butter and mix well.

Take half of the mixture and pat it in the bottom of a 9x13 baking pan.
Dump the ice cream in a mixing bowl and stir until softened.
Spread the ice cream over the bottom mixture then top with the remainder mixture.
Freeze until time to serve, or mixture has set. Slice and enjoy... we love to top ours with home made strawberry freezer jam, pie filling, chocolate or caramel sauce.

1 half gallon vanilla ice cream softened
In a mixing bowl mix
2 cups rice crispies
1 cup brown sugar
1 cup coconut
1 cup chopped nuts
1 stick melted butter
Make sure you mix well
Using half of the rice crispy mixture, line a 9x13 inch pan. Then take the soft ice cream mixture and spread over the mixture. Take the rest of the mixture and spread on top of the ice cream. Freeze until ice cream has set.
Serve with the topping of your choice.
Enjoy!

A delicious soup recipe for a cold day

It has been freezing here lately. Below zero temps.  When it is that cold outside, it just makes me want to put a pot of soup on.  I love any kind of soup, but this one is one of my favs. This is the soup that got my hubby to marry me.  I made this for him on our second date, and after that he was hooked.  You know what they say, the way to a man's heart is through his stomach. So true.  It is warm, creamy, comforting, and delicious, and the best part, my kids love it!

Potato Soup
6 medium potatoes peeled and sliced
4 carrots peeled and diced
6 celery stalks diced
2 quarts water
Put all vegetables in a pot with water and cook until tender, then drain
Meanwhile, after vegetables are cooked take
1 chopped onion and sautee it in
6Tablespoons butter
When the onion is soft add
6 Tablespoons flour
1 tsp of salt
1/2 tsp of pepper...more if you like it spicy
Cook together for a minute and add
1 1/2 cups milk
Stir the milk in until thick then add the cooked vegetables
Add store bought chicken broth until soup is desired consistency
Add more salt and pepper to taste, sprinkle grated cheese on top, and enjoy!
